IRELAND - The Irish Sea Fisheries Board (BIM) is holding a one day workshop, introducing fish smoking techniques on 26th August at the BIM Seafood Development Centre, Clonakilty, County Cork.

The workshop is suitable for technical and quality staff in the fish smoking sector and new entrants into the smoking industry.

An introduction to the science behind the smoking process; practical demonstrations of salting/brining, packaging and smoking equipment will be presented. BIM, Industry and Supplier representatives will be on hand to answer your questions regarding all aspects of the smoking process.
