The harvest from two, one-acre ponds at his aquaculture venture will start on 5 October. That’s when Mr Ipock pulls the plug and lets the prawn into a nearby catch basin.
He is now lining up the hands to help scoop the prawns up with nets and baskets for what could be a new record catch.
He is also organising the marketing, most of which he plans for the New Bern Farmers Market 6 October, where those in doubt can taste the catch before they buy. Sample prawn will be cooked up by local Chef Dawn Freeman of Vintage Bleu from 9.00am to 11.00am.
"We anticipate a good harvest," Ipock said. "The product size is already as big as we harvested last year and we have another couple of weeks to go."
